Stuffed Red Peppers

imageStuffed peppers.  Another recipe that I’ve never tried but I love to eat!  I’ve only had them a few times, but I must say, these were the best:).   I boiled the peppers for a few minutes and then stuffed them with tomato sauce, rice and ground beef.  Topped them off with mozzarella cheese for the last few minutes of cooking.  The peppers were very tender and easy to cut through.  I cooked some pasta and turned this dish into 4 meals!  Note to self, don’t by the giant peppers!  They are huge!!!

Pasta Avocado Caeser Salad

Baked chicken breasts, cooked bacon, boiled pasted, lettuce, avocado, fresh Parmesan cheese, and of course Caeser dressing.  Caeser salad is a classic and this is an amazing way to make a salad a meal.  The recipe called for grape tomatoes, but since I scrunch up my nose at those, I changed the recipe.  I took out the tomatoes and replaced them with bacon.  Look at me go…changing up recipes.  I’ve made this twice now and the first time I used the chicken and pasta while they were still warm and that was really good.   Cold was great too.   Excellent dinner for 1 person!  So filling!

 

Garlic Herb Mushrooms

Fungus. Toodstools. Mushrooms.  There are approximately 10,000 species and of that about 4% are tasty and edible.  So many names and so many varieties!  I usually eat mushrooms mixed with other things.  This was my first time to have them on their own.  Amazing.  Put them in the slow cooker for about 3 hours in vegetable broth and garlic and herbs.  I added some cream for the final half hour of cooking.  Mushrooms were amazing and the broth was like cream of mushroom soup.  Definitely making this again!

Ranch Chicken

Well, holidays are over and it’s back to cooking.  I have never been able to make a good piece of chicken, and it’s been on my list of things to make for a while!  This recipe was corn flakes and ranch dressing. I prepared it shake n’ bake style and baked it.  It turned out really good.  Nice and moist and fully cooked! Served it with rice and creamed corn.

Peking Duck

Peking Duck is a famous dish in Beijing.  This is my favorite dish in China.  I’ve had it in Canada before, but it just seems really cool to eat it in Beijing.  It was amazing.  As you can see in the pictures, it’s all about the skin.  You get a thin wrap and put a bit of duck on it, along with some thinly sliced onions and cucumbers.  There is a special Beijing sauce that you put on too (not too much!). Wrap it up and enjoy.   This is a specialty food, and is not eaten on a daily basis.  Veggie dishes are very common for every day.   Red and green peppers, onions, cabbage, sweet potatoes and eggplant were a few of the more common dishes we ate.  They too were excellent.  Neal ordered us cabbage and what he said were noodles, so I took a few generous bites of it.  Thinking the noodles were a weird texture and flavor I casually mentioned it.  “Oh, that’s jellyfish, not noodles.”  What?!?!  He gets such a kick out of seeing people try strange things.  I probably would’ve eaten more if he didn’t say anything!  All in all I really enjoyed the Chinese food!!
